The power of cauliflower
Meet Ramzi Malhas, the 28-year-old founder of Demons & Angels, a new healthy-eating, fast food delivery concept in Dubai. The menu is full of pizzas, burgers and breakfast sandwiches, and even desserts like brownies or muffins, each with a common twist – they all use cauliflower instead of flour. Try a cauliflower-crust pizza or a cauliflower-bun burger, gluten-free and low in carbs and calories. Vegan cheese and plant-based meat can also be added if you prefer.
Demons & Angels operates across Dubai, with kitchens based in Dubai Marina, Motor City and Business Bay. Positioning itself as a solution for fitness foodies, dieters and gluten intolerants, or just those wanting to eat more healthily, we sat down with founder Ramzi to find out more:
What’s your background in the food industry?
I ended up in this industry by accident. I studied hotel management in Switzerland, and after graduating worked in two hotels, the Ritz-Carlton Singapore and the Armani Hotel in Dubai, all in the front of house operations. My interests in healthy eating and fitness came when I started working with a healthy meal plan delivery company, Colour My Plate, and that led to my idea for Demons & Angels, turning my favourite types of fast food into something healthy and guilt-free.
Why go with the name Demons & Angels?
It’s the best of both worlds, or as our slogan says, ‘Healthy cheat foods’.
And the idea is based around cauliflower?
Yes, all of our products are made from 100% real cauliflower to replace high-carb glutenous white flour that usually causes bloating, weight gain and poor energy levels. Cauliflower is naturally gluten-free and low in carbohydrates, giving you a low-carb pizza or burger.
What other ingredients do you use?
The cauliflower pizza crust and burger bun were carefully designed to include only wholesome ingredients. So everything is low-carb, dairy-free, vegan-friendly, and much lower in calories overall than your average burger bun or pizza base. You don’t get that tired, sluggish and bloated feeling you can often get when eating fast food.
How do you prepare the cauliflower? Is it ground into a powder?
We grind it into a rice-like texture, steam it, and then squeeze the water out to remove the moisture. Cauliflower is classed as a superfood, with its nutrient-rich content, very high fibre, vitamin B and antioxidants.
Talk us through the menu.
Pizzas and burgers are the main items. Everything from a spicy meat eater pizza to a beef angus cheeseburger in a cauliflower bun. Try them with vegan cheese or plant-based meat. People often say they can’t tell it’s a healthier option to the norm. We also hope to expand to include tacos, flatbreads, desserts, low-carb bowls, and more.
What else is next for you?
We’re definitely looking at the retail market, and wholesaling our products into all sorts of organisations, from supermarkets to schools, helping parents who struggle to feed their children more vegetables. We’ll sell our products through online retailers and our official website.
What’s the biggest thing that launching a business has taught you?
That you need two things for success: passion and perseverance.
